Remember the Almond Joy’s from years ago! Yes we all do, right?
Well you don’t have to do without anymore!
I wanted an almond joy but I wanted the recipe to be quick and easy so back to experimenting and it turned out really great!
Quick & Easy Almond Joy’s
- 2 cups fresh shredded coconut
- 1 cup coconut oil
- 1/4 cup cacao powder
- 20 drops Young Living Peppermint Oil (this is the best part!)
- 5 tablespoons maple syrup
- 1/4 cup cacao nibs (optional it just adds more texture and crunch)
Just put it all in your high speed blender except the nibs add them lastly.
Blend till not quite smooth you want to keep some texture of the coconut. Once that desired texture add your cacao nibs blend a few seconds then pour into molds and freeze.
