Who loves Reese’s Peanut Butter Cups? Most of us, right?
Can’t remember the last time I had one but I know that I have been avoiding due to the ingredients. The recipe below is a better option and still the same great rich chocolate with a rich almond butter.
Just a one or two of these almond butter cups and you will feel satisfied and stay on track with Paleo.
Easy Peppermint Almond Butter Cups
1 cup 72% cacao chips (or make your own chocolate using cacao powder and sweetener of choice adding double the coconut oil)
4 tblsp coconut oil
Almond Butter (I used Barney Butter here but you can make your own with fresh almonds in your vitamix)
5 – 10 drops of Young Living Peppermint Oil (This is the brand I am comfortable to recommend)
Slightly warm the cacao chips and coconut oil just enough to liquefy and add your choice of drops of peppermint oil.
Then Pour remaining chocolate on top of Almond Butter and place in freezer until chilled.
Ready to Enjoy!
