Healthy Pancake Breakfast with Protein

For a nice treat I like to start my day on weekends with a Healthy Breakfast.  This breakfast packs over 20 grams of protein and offers good carbohydrates for energy to start your day!

So many people are avoiding gluten and for good reasons but while doing this they are instead reaching for gluten free mixes that are not any healthier and sometimes more processed.

I have a simple recipe I think you will love!  It has just 3 simple healthy ingredients.

Sunshine’s Pancake Special

  • 2 whole eggs
  • 1/2 cup gluten free oatmeal (uncooked rolled oats)
  • teaspoon of cinnamon (more if you like!)
  • optional (sea salt)
  • optional (1 scoop of protein powder)

Mix together and cook as pancakes with a light coat of coconut oil.   Warm fresh cherries or peaches and pour on top of pancakes.  Feel free to add different toppings or spices in your recipe  ~ the sky’s the limit!  Enjoy ~~
