This is so simple you can definitely do this! And tastes amazing! Being from the South I know what a Key Lime pie is suppose to taste like. But, I also know that it is a lot of sugar. Below is a keylime pie (healthier version) recipe. You will enjoy making this with real whole foods. I was actually tempted to just buy a Key lime pie the other day and took it out of the freezer section until I seen there was 3 inches of ingredients and only two words I could pronounce. No way am I going to put all of this into my body. So I quickly went off to the produce section loaded up with what I needed – things like coconut oil, dates, pecans I keep on hand. So in no time I had a beautiful Key Lime Pie.
2 cups pecans
1/2 cup coconut shredded
1 cup dates
Blend in vitaminx until smooth – place in pie pan.
1.5 cups soaked raw unsalted cashews
1 large avocado
1/2 cup real maple syrup
1/2 cup lime juice
dash sea salt
1/2 c coconut oil melted
Blend till smooth in Vitamix or high speed blender. Pour into crust place in freezer until well chilled and set.
Ready to eat.
Yummy! People will think it is better than the cooked version of Key Lime Pie.
