Easy Coconut Macaroons

We all now have heard how good coconut is for us so why not enjoy a healthy coconut treat.

Studies have shown that the medium chain triglycerides in coconut oil have been shown to increase 24 hour energy expenditure by as much as 5%, potentially leading to significant weight love over long term.  Populations that eat a lot of coconut are among the healthiest people on the Planet.  Coconut might seem like an “exotic” food to some in the Western world, mostly consumed by health conscious people.  However, in other parts of the world coconut is a dietary staple that people thrive on.  Much of the population in Tokelauans from the South Pacific eat over 60% of their calories from coconuts and are the biggest consumers of saturated fat in the world.

Lindsay, one of my Health Guru friends, is going for a healthier treat at Halloween this year by making these Coconut Macaroons.

She says they are delicious and  better than Halloween candy.  Believe it or not she gave her Halloween candy to her little sister Lily and enjoyed the Coconut macaroons instead.

Coconut macaroons

  • 6 egg whites
  • ¼ tsp sea salt
  • ½ cup raw honey
  • 1 tbsp pure vanilla extract
  • 3 cups unsweetened coconut

In mixing bowl whisk eggs, sea salt, raw honey, vanilla and coconut.

Spoon batter onto parchment paper on cookie sheet.  Bake at 350 degrees until lightly browned.  Enjoy!
