Not my Mama’s Fudge!
How many of you like Fudge? I am talking about the deep chocolate rich fudge taste. Raised in the southern state of Louisiana, my Mother is one of the best southern cooks around. Now most of you know “Southern cooking” and “healthy” have nothing in common. Yes I grew up on lots of fried foods you name it we fried it! I have not lost my cravings for good “southern” cooking so I have to manipulate recipes to a healthier version.
My Mother is well known for her chocolate fudge and we all love it but I just can’t eat it anymore knowing the effects it can have on my health. Sometimes that is how we can control our diet is by thinking about the after effects of a certain food. At least for me this works!
I remember during the holidays my Mama (in the south we say mama) would be in the kitchen making fudge for hours. She would be cooking it on a very slow heat then later I would hear her stirring and stirring the fudge and sometimes my whole family had to take turns stirring. Especially if the temperature or humidity wasn’t just right it effected the fudge so that meant more stirring. To this day, my Mama still makes her famous fudge and the family loves it.
For me, I have a much easier recipe and it only takes about 10 minutes to make! Wow! This is a Coconut Fudge so it is a little different but still very chocolatey and texture like fudge.
Easy Coconut Fudge
- 1 cup coconut butter or Tropical Traditions Concentrate
- 1/4 cocoa powder
- 1 tsp vanilla extract
- 2 tbsp pure maple syrup
- 1/2 tsp sea salt
- optional (1/2 cup shredded coconut)
Melt the coconut butter then add all ingredients in blender until smoothly blended. Place in a glass dish – I use parchment paper on the bottom – pour fudge into pan then refrigerate until firm. Enjoy!
I use Tropical Traditions Coconut Cream Concentrate it is so smooth!
