RAW Pumpkin Spice Pie for the Holidays!

For several years now I have had the opportunity to eat at many Raw Food Restaurants in California and Arizona.  My very favorite restaurant is  The Chocola Tree located in Sedonna, AZ.  When you enter the restaurant you will be welcomed by all their homemade raw chocolates – many varieties.  If you have the pleasure of tasting you will not believe they are raw because they are such a smooth rich deep chocolate.  In the summer you can have your meal out back in the garden area.  They have a great selection on their menu and even if you are looking for something not “raw” they usually have a few dishes available that are very tasty.  They have many special events and also cater.  Below they share their recipe and I think you will enjoy!

LIVE PUMPKIN SPICE PIE

Crust:
1/3 cup macadamia nuts
1 cup coconut flakes
pinch nutmeg
1/8  tsp sea salt
2 tsp honey
1/4 tsp vanilla
Blend nuts only first in food processor to release oil, then, add other ingredients in order listed. Use a fluted tart pan and press the crust into the bottom and side.

Filling

  • 1 Avocado
  • 1/2 cup coconut crème
  • 1 cup carrot juice
  • 1/4 cup honey or 3 Tbsp soaked dates. Or both if you like it sweet!
  • 2 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 2 Tbsp cinnamon spice
  • pinch sea salt

Blend liquids first (excluding coconut oil) in a blender. When thoroughly blended, add the powders and honey. Then add the coconut oil. Take contents and pour over your crust. Set into the freezer for 1 hour or refrigerator for a few hours until set. Then serve and enjoy an amazing delicious and nutritious pie!

Makes 1 pie cut into 8 large pieces
