Amazing Raw Coconut Pie

Oh my goodness!  You have to try this recipe.  It’s better than strawberry shortcake!  To get the freshest best tasting raw coconut pie start with fresh young coconuts.  Using fresh coconut right out of the young coconut will give you the best tasting coconut pie you will ever put in your mouth.  If you make this once – I promise it want be the last.  It is truly amazing and a must try recipe!  Not only will you enjoy the taste but you will reap many benefits from the coconut.  Oh yea by the way … it has a vegetable in it too —  Enjoy!    Sunshine

Crust

2  cups dried shredded organic coconut
1/3 cup extra virgin coconut oil
4 dates, pitted removed
2 tbsps real maple syrup
1 tbsp organic vanilla
2 cups sliced organic strawberries to line the crust

Mix all ingredients in food processor or Vitamix until the mixture binds together.  Scoop crust mixture into a deep pie plate and distribute evenly.  You can use the back of a spoon to smooth out crust. Chill for 30 minutes.   Spread sliced strawberries on the bottom of the crust just before pouring the filling in.

Filling

2 cups young coconut meat (usually need 3 coconuts)
1/2 cup diced, peeled  zucchini
3/4 cup cashews, soaked 30 minutes & drained
1/3 cup virgin coconut oil

1 1/4 cups fresh young coconut water (from coconuts)
1 1/2 tbsp  organic vanilla
3 tbsp maple syrup
Strawberries & Raspberries for decorating top/ can garnish with mint

Place all ingredients (except berries and mint) in a blender and process until smooth and very thick.   The Vitamix works great here for a very thick and smooth texture.    Pour into strawberry lined chilled crust.  Chill 3 to 4 hours.  Decorate with berries & mint.
