Healthy Gelatin – Keto Friendly

I love the benefits of Jello!

Gelatin is a form of hydrolyzed collagen, so it’s essentially a part of broken-down collagen. Collagen is “the most abundant protein in the animal kingdom” and the major component of connective tissue in the human body making up about a quarter of our total body mass.

Collagen is a key builder of healthy skin, muscle, tendons, joints, bones and other tissue in both humans and animals.

Here’s my recipe for that Healthy Jello:

1.5 cups of boiling water

3 tablespoons of  gelatin

2 tablespoons of xylitol

3 droppers of vanilla creme stevia

1 cup lemon juice

tsp zest of lemon

3 cups of ice cold water

berries (mostly blackberry and raspberry as they are lower glycemic)

 

Instructions:

Boil the water then add gelatin.  Once dissolved add the xylitol, lemon juice, stevia, lemon zest, berries.  Stir well then add in cold water and pour into dish.

Let sit in fridge.  Top with a homemade whipped cream using heavy cream.  Enjoy!
