Curried Spinach with a GREAT Anti-Inflammatory TURMERIC

This comes from a traditional Indian dish, sag bhajee and is a great way to flavor spinach.

Ingredients

  • 2 lbs spinach
  • 1 red onion
  • 4 ounces goat cheese ( sheep’s cheese or feta)
  • 1 tblsp Ghee (or olive oil)
  • 1/4 tsp celtic sea salt
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1/4 tsp coriander
  • 1/4 tsp paprika
  • few slices of ginger (to taste)
  • jalapeno (to taste)
  • pistachios (optional)

 

Saute the diced onion and ginger in a heated pan of ghee (or olive oil) add salt and cook until tender.  Add the turmeric, cumin, coriander, paprika and jalapeno.  Infuse with the oil and onion for a bout a minute.  Add washed  and dried spinach to the pan.  Let the spinach wilt and soften and spices mix well.  Remove from heat and add cheese and pistachios.   Serves 3-4
